Punjabi food is known to have a lot of heat. Raita, which is lightly seasoned yoghurt, is the perfect accompaniment to help cool the palate and enhance the flavors of a savoury dish.
There are quite a number of variations to making this yogurt based dish. the most common as well as popular are mint-cucumber raita and boondi raita.
Raita are always a good accompaniment for pulao, biryani or most rice dishes. they will also go well with dal rice or roti sabzi combination.

Ingredients :
Yoghurt / Plain Curd - 2 cup
Red onion (chopped) - 1/4 cup
Tomato (seeded and chopped) - 1 no
Cucumber (seeded and chopped) - 1/4 cup
Cumin seeds ( roasted and crushed coarsely) Powder - 1/2 tbsp
Black Salt - 1/2 tbsp
Chaat Masala - 1/2 tbsp
Red chilli powder - 1/4 tbsp or as per as your taste
Garam Masala Powder - A pinch
Salt to taste
Chopped Coriander Leaves for garnish- 1 tbsp
Water
Preparation Method :
1. Take a bowl, add yoghurt, whisk it until it smooth with little bit water, check it with not a very thick and thin consistency, the level of consistency is smooth.
2. Add the spices and salt and mix well.
3. Add the chopped veggies and stir them into the yogurt.
4. Check the taste and add more of the spice powders or salt if required. Keep it in a fridge to chill.
5. Before serving garnish it with chopped coriander leaves. Serve the vegetable raita with tawa pulao.

DeleteOften have enjoyed mixed vegetable raita at restaurants but have not made it at home as yet. Such a simple and delicious raita to enjoy as a side dish with the main meal or with biryanis. Easy to try out this recipe at home, by following your recipe.

ReplyDeleteRaita looks yumm, I can feel the pungent flavor of red onion, sweetness of cucumber and little sour taste of tomatoes. Never have added chat masala in my raita. Next time I will surely add chat masala too.
