Coconut Ladoo Recipe – quick and easy ladoo recipe with step by step photos.

This is our 13th Foodie Monday Blog Hop, theme is "Diwali Sweets" easy-peasy sweets recipe with different twist, So I made this Coconut Ladoo with little twist!!

Coconut ladoos are often made for festive occasions. I made this ladoo long time back on (during Ganesh Chaturthi) and again I made them for the tomorrow’s Diwali festival and have kept in the fridge. These stay good in the fridge for 4-5 days. 


The appearance is satisfying and flavors too are rich, moist and yummy.


It is a delicious desert is often made for an auspicious or a pooja, it could also be a festive occasion like Diwali, Ganesha chaturthi or a religious ceremony conducted in our home or simply make them for any celebrations and enjoy them.

 
These coconut ladoo's are made with few ingredients. There are two main ingredients which are coconut and condensed milk. I love coconut in sweets...


This is very popular sweet-dish and easy to make, delicious coconut ladoo recipe within 15 minutes! The appearance is satisfying and flavors too are rich and yumm. 

It's delish and perfect ladoo recipe for festivals...my husband really liked it and become a fan of homemade sweets rather than market sweets ;) so decided to share this easy recipe of ladoo with you all. 

They taste so delectable that you’ll fall in love with this dessert. 

Although ladoo's will be easily available in any of your nearby sweet shop but the one’s you make yourself taste even sweeter.

Let's start making of coconut ladoo recipe with step by step photos. Learn how to make melt in the mouth ladoos :D

Prep time   :  2 Minutes
Cook time  :  15 Minutes
Total time  :  17 Minutes
Yield         :  8-10 Small size Coconut Ladoo

Ingredients :
 

Desiccated Coconut - 1/2 cup
Condensed Milk - 1/4 cup
Milk - 1/4 cup
Sooji/ Semolina - 1 tbsp
Cardamom Powder - 1/8  tbsp
Powdered Almonds - 8 to 10 nos
Raisins (for garnishing )
Chopped dry fruits
Coconut powder - 1 tbsp for rolling the ladoo

Preparation Method :

1. First of all, take a raw almonds in a mixer grinder, make it a in a powdered form.

2. Mix the Semolina, d
esiccated Coconut along with the almond powdered.

3. Take a pan, heat it on high flame and add Semolina, desiccated Coconut and Almond powder. Mix well.

4. Roast them on medium flame until you witness light golden color of these ingredients. Stir continuously.


5. After 3 minutes, it has changed its color to golden brown.


6. Now we will add milk & cardamom powder. Milk will help soften the semolina in the mixture.

7. Now add Condensed milk and mix well again. Keep cooking this paste until it thickens approx 3 minutes.


8. After 3 minutes of cooking on medium flame, it will become thick. Switch off the stove and keep it aside to cool down at room temperature.

9. Once it is cool down, we need Ladoo mixture, 1 tbsp of coconut powder for rolling, chopped dry fruits and 1 tsp of ghee or unsalted butter.

10. Grease your both hand palm with ghee. This will help create a non-sticky layer while we roll Ladoo.

11. Now, pick small portion of mixture and roll it using both hands. I will add chopped dry fruits inside the coconut balls and again roll it again.


12. After giving it a round shape, cover around it with the desiccated coconut powder. 

Ladoo will feel a bit soft right now as it is fresh. Don’t worry, it will solidify a bit in a hour or so.

13. Roll it once again in Coconut powder. It is now ready.

14. Garnish it with raisins. Serve it !!


** Note **

  • If you are using whole Dry Coconut then do not use the outer brown layer of the coconut.
  • To make Condensed Milk at home, boil full cream milk and Sugar until it reduces by 50% of its original quantity.

Farsi Puri is a famous Gujarati snack made during
Diwali festival. It is a crispy Indian deep-fried bread. The word “Farsi” derived its name from a Gujarati word meaning crispy. This deep fried snack tastes best with sour mango pickle and tea or coffee. 

This is my friend recipe, she is not a blogger...she is just home maker belongs to Gujarati family, they made this snacks on every Diwali. So take this recipe from her and made it...this is very easy recipe and take very less time to prepare.

The texture of the Farsi puri is flaky, crispy yet melt in your mouth. To get the flaky texture, ghee is used in the recipe.


These puris are full of calories, because good amount of ghee is used and then they are deep fried but I can eat once in a while. I love deep fried breads :D during festivals.

The taste of this farsi puri is salty with touch of peppery flavor...so yummy :) My husband really liked it...It stays good for a month, store in airtight container at room temperature.

Lets start step by step farsi puri recipe with pictures :

Preparation time: 20 minutes
Cooking time: 20 minutes

Servings: 3-4 (Makes 7-9 puris)

Cuisine: Gujarati, Indian

Ingredients:

All purpose flour (Maida) – 1 cup
Sooji (rava or semolina) – 2 tablespoons
Salt – to taste
Shahi jeera (kala jeera or black cumin seeds) – 1 teaspoon
Black pepper – 1 teaspoon, coarsely ground in mortar and pestle
Ghee (clarified butter) or oil – 3 tablespoons (I used ghee for crispiness)
Water – 4 to 5 tablespoons
Oil – for deep frying

Preparation Method :

1) Take all purpose flour, sooji, salt, shahi jeera and coarsely ground black peppers in a bowl. 


2) Mix well.

3) Now add ghee. You can use oil instead but traditionally ghee is added.

4) Now rub the ghee and flour mixture together using fingertips. Take you time and rub them till the mixture becomes crumbly like breadcrumbs. This step is important to make the flaky farsi puri.

5) Now add little water at a time and start kneading the dough. The dough should be stiff and hard. 


6) Cover the bowl with the plate and let it rest for at least 15 minutes. After resting time, you will notice tiny white bubbles on the dough, that is because of the salt. Knead it once again to incorporate those bubbles.

7) Divide the dough into small balls. Make smooth ball and flatten it out between your plam.


8) Now work with one flatten disc at a time. Using rolling pin and rolling board, roll it into 3 inch diameter circle. The puri should be thick.

9) Now using the knife or fork, prick the surface. So they don’t puff while frying and become crisp.


10) While you are rolling, heat the oil in a pan on medium-low heat for deep frying. While oil is getting hot and ready, roll few puris and arrange them on the plate.

11) Oil should be hot. These farsi puri are thick and in order to make it flaky and get it fried from inside, we need to fry them on low-medium heat. Add puri in batches, I added 4 puri at a time don't overcrowd the kadai.


12) You need to maintain the oil temperature, to do so you can lower or increase the flame intensity as needed during the frying process. 


13) The whole frying process for one batch will take about 6-7 minutes. So while frying the one batch, roll rest of the puri simultaneously.

14) Once they are cooked and light pink in color from one side, flip them and fry another side as well.

15) Remove them using slotted spatula and keep them on paper towel lined plate.


16) Repeat the frying process till all the puris are fried. 


17) Let the fried farsi puri cool down completely, Serve it with your fav pickle and tea !!

The Jaggery cake recipe is based on our 11th Foodie Monday BlogHop, interesting theme is #AlphabetFood, means my name is Jolly and my first word is "J" so i need to take an ingredients that starts from J, so I choose Jaggery and but confused what to make which is healthy as well as tasty. :D

So I decided to bake a cake using with jaggery instead of sugar and take another twist in baking to used whole wheat flour not maida.  

Not only it tastes delicious but looks so good that no other decoration is needed and this makes it perfect for any occasion or family gatherings. This is a fabulous cake recipe. 


Jaggery cake is a well risen cake and best thing about this cake is made with very simple ingredients, which is easily available in our kitchen. This cake recipe is basically from Srilanka only, there people bake a cake using jaggery with wheat flour or either sooji(semolina). 

A simple and easy recipe of eggless "Whole Wheat Jaggery Cake". The texture of the cake is soft and moist.....

But it’s really easy to make. Everybody loves it, probably it's the best jaggery cake I've ever made so far. 

Baking a cake is always a pleasure experience for me.

How many of you have seen your grandparents and folks having jaggery after every meal! I saw and Do you know why do they eat it and prescribe it to others too? There are various purposes for it. 


There are multitudinous medical advantages of jaggery(gur). It is a crude sweet or sweetening specialists as well as a great solution for some infections.

Health Benefits of Jaggery
  • Jaggery is a great remedy for anemia, asthma, joint pains and menstrual pains.
  • It also aids in digestion, purifies blood and keeps the skin away from problems such as acnes and pimples.
  • It is a great energy booster as it provides us lots of energy.

You can make end number of cake which I have tried and tested like 
whole wheat eggless chocolate cake,
rainbow swirl cake, 
chocolate biscuit cake, 
Orange Chiffon cake, 
chocolate cake, 
vanilla-chocolate swirled marble cake,  
chocolate fudge

A soft and light cake. Let's start step by step vegan jaggery cake recipe with step by step photos.

 
Ingredients : 
 
Wheat Flour - 1.5 cups
Jaggery - 3/4 cup - Powdered (You can use 1 cup for more sweetness)
Baking Powder - 2 tsp
Table Salt - A very small pinch

Cashew Nuts - 1 tbsp
Raisins - 1/2 tbsp Water - 1 cup (Use milk for a non - vegan version)
Vegetable Oil - 7 tbsp
Vanilla essence - 1 tsp

7 inch round cake tin
Vegetable Oil - 1/2 tsp (For greasing the cake tin)
Wheat Flour - 1 tsp (For dusting the cake tin)

Preparation Method :

1.
Grease a cake tin with little bit oil evenly on the base and edges of the tin and also dust the inside of the tin with a little flour to help the cake can come outside smoothly from cake tin and not burn also.


2. Pre-heat the oven to 180°C / 350°F for 10 minutes.

3. Dissolve jaggery in water and strain the liquid through a sieve. Mix in the vanilla extract. Keep it aside.



4. Sift Wheat flour, salt, baking powder through a sieve at least 2 times.

5. Once sifted, mix all the dry ingredients thoroughly using a spoon. This is just to ensure the salt, baking powder are evenly distributed through the wheat flour.

6. Make a well in the center of the flour mixture and pour in the water, jaggery and vanilla essence, that was prepared in step 3.


7. Gently bind the ingredients with a spoon. Please don't use any whisk or beater for this. Over beating will make your cake very dense and heavy. 

8. Next add in the oil. Again combine the mixture gently. The batter might form a few clumps.

9. Pour this batter into the prepared cake tin. Tap the cake tin on the counter to ensure the batter levels out. I added cashew nuts and raisins on top of the batter as a flower design.

10. Put this into the pre-heated oven and bake at 180°C / 350°F for 20-25 minutes or bake until a toothpick inserted into the center of the cake comes out clean...
(The baking time depends on the oven. Mine took just 24 minutes to bake. So you need to start keeping an eye on the cake after 15 minutes.)

11. After the baking time is over, allow the cake to cool down completely. 


12. You can cut and serve this cake with tea or coffee.
