This is one of the Indian flatbread. They are so simple to make and khasta in taste. They are made up with wheat flour, ajwain and some Indian spices. This is best meal for breakfast. Ajwain seeds impart strong thyme like flavour. Ajwain seeds has many healthy benefits. We can make this ajwain paratha into two types - First we make a dough of ajwain paratha or another we use ajwain in paratha. This is best serve with any curry veggie, pickle, rice kheer, dahi and tea also.

Ingredients :

Wheat Flour - 1 cup
Ajwain (Carom seeds) - 1/2 tbsp. (depending upon your taste also)
Salt to taste
Red chilli Powder
Oil used [ for frying + 1 tbsp. for making dough ]
Water


Procedure :

1. Sieve the wheat flour and rub the oil into it.

2. Add salt, red chilli powder, ajwain and mix well.
3. Add enough water and knead into a stiff dough.
4. Take a piece of dough in hand. With the help of rolling board and rolling pin, roll it out in a small circle. Now, put the little bit oil in the centre of the rolled out dough.
5. Sprinkle the flour on board. Make a paratha and it should be little bit thicken than roti.

6. Place it on a heated tawa and cook it as you would cook plain paratha. Cook both the sides and use 1/2 tbsp on on1 side, until light golden brown spots appear.

7. Serve hot Khasta Ajwain Paratha with Dahi, Lassi and Tea.
The concept of stuffed left-over veggie bread toast is simple and easy to prepare. This is best snack for breakfast. You can made it at any time because this is jhatpat recipe. You can serve as a tea-time breakfast. For this you just need your left-over veggie from your fridge and other spices.

Ingredients :

Left-over Veggie (I'll pick Potato veggie you can take any cooked vegetable)
Brown Bread
Salt to taste
Red chilli powder
Chaat Masala
Oil for shallow fry

Preparation Method :

1. Mashed your left-over vegetable with your hands or use fork to mash. Add salt, red chilli powder and chaat masala. Mix it well.
2. Take 2 Bread slices, spread the mashed vegetable between them, seen in the below picture.
3.  Heat some oil in a non-stick pan / tawa. Just shallow fry both the sides with little bit oil.

4. Serve it with tomato sauce.
 
Kabuli Chana Cholley | Chickpeas in Punjabi Style
This is one of the North-Indian speciality dish. It is very popular Punjabi dish. Kabuli Chana in Punjabi style is prepared by cooking chickpeas with onion, tomato, ginger, garlic, other special herbs and spices. This is my Mom's recipe, she cooks very well and tasty. This recipe tastes similar to the cholle one gets in the punjabi joints on the streets of Delhi. 

Sometimes a simple dish is all it takes, to make me feel warm and cozy. Its like that secure feeling you get while lying down on mom's lap :) It's like home. This simple dish of lentils for me is all that and more. A total comfort food. 
  
Chickpeas are an excellent source of nutrients, iron, fiber and protein, it's overall a healthy ingredient. Jeera rice, Kulcha and Poori pair very well with this dish. If you are looking for more chole recipes then do check Amritsari Chole Recipe .Here's the recipe of Kabuli Chana Cholle in Punjabi Style !!

Ingredients :

Kabuli Chana / Chickpeas - 2 cup
Onion(medium) - 3 nos.
Tomato(medium) - 3 nos.
Chopped Ginger - 1 tsp
Chopped Garlic cloves - 1tsp ( you can use ginger-garlic paste also - 1tbsp.)
Green chillies (optional)
Jeera - 1/2 tsp
Coriander powder
Red chilli powder
Dry Mango Powder
Garam Masala Powder
Salt to taste
Tea water ( boil tea in water, we use that water in white cholle)
Oil

Note*- This is Jhatpat recipe , no need to soak chickpeas overnight.

Method :

1. Tea Water - Take a pan, add 1 cup of water and now add tea. Give 1-2 boil in full flames. Switch off the flame and Keep it aside to cool.

2. In a cooker Add chickpeas, water and salt. Pressure cook the chickpeas with until done. Give 1 whistle in a high flame, then reduce the flame in low mode and cook for 1/2 an hour more.

 3. In another bowl, Take boiled chickpeas from cooker and keep it aside.
4. For making masala - Grind all onion, tomatoes, garlic cloves, ginger and green chillies(optional) in a mixer to make a thick paste, add 1 tbsp of water(if it is required).
5. Heat a oil in a pan or same cooker, add jeera and onion-tomato masala, saute for few minutes. Add all indian spices coriander powder, red chilli powder and saute in a low flame till the masala is cooked. When masala is leaving oil in around, it means your masala is cooked.

6. Add cooked chickpeas in cooked masala, mix well. Pour slowly add Tea water which was kept aside and adjust further addition, in order to achieve a thick consistency.

7. Add dry mango powder and required salt. Allow to boil, add garam masala powder and remove from fire.

8. Serve hot cholle with rice, chapatti, naan and poori.

Special Note :-
  • If you want to make dry cholle which is shown in picture, its very easy to make, take left-over cholle in a pan. Cook in a low flame, reduce the curry from chickpeas when 80% curry reduced just add dry mango powder. Your chatpate cholle is ready. Serve hot chatpate cholle with poori.

This is instant breakfast recipe. Sometimes I make dosa with suji or with Idli/Dosa batter also, but today in my fridge both of the ingredients are not available only maida/all-purpose flour is there. So, I have decide to make dosa with maida. When I eat this dosa, I don't feel that this is made up of maida. First time I tried it and feels good they are good and too crunchy in taste. 

It's simple, crispy maida dosa recipe that can be made instantly. This is different variety of dosa made with maida, though it is not very healthy. Here's simple and crispy maida dosa recipe that can be made instantly.

Ingredients :

All-purpose Flour (Maida) - 2 cups
Finely Chopped Onions - 1 no
Chopped Coriander Leaves
Chopped Green Chillies - 2-3 nos
Chopped Ginger - 1/2 tbsp.
Soda - very little
Salt to taste
Red Chilli powder
Oil for Fry

Preparation Method :

1. Mix together maida, baking soda, onion, coriander leaves, chillies, ginger, red chilli powder and salt along with sufficient batter.
2. Heat tawa / pan, spread a oil and a ladle full of the batter onto it.
3. Spread out the batter and sprinkle oil on top. When one side crispy, turn onto other side.
4. Remove from the tawa when cooked on both the sides. Serve this hot dosa with tomato sauce or tangy Sāmbhar.

Note : You can add tomatoes, follow the same steps 1, when u spread the batter onto tawa just add chopped tomato (small slices) onto the batter and sprinkle oil on top.
Bhindi is one of the veggie which is loved by every person. This is very simple and mouth-watering dish taste great with chapatti & parathas. This is my husband & mine favourite veggie. My husband wants to eat this veggie twice in a week. This okra / bhindi fry recipe is cooked with lots of different spice powder. I tried this new version of bhindi. I hope you liked it. I am always try to make recipes in some fusion for good taste.

Ingredients :

Bhindi / Ladies Finger - 1/2 kg
Onion (large) - 1-2 (as per your requirement)
Green chillies - 1 no
Coriander powder - 1/ 2 tbsp.
Red chilly powder
Pepper powder -  1 tbsp.
Turmeric powder
Salt to taste
Oil - to fry
Chopped Coriander leaves for Garnish

Preparation Method :

1. Wash and dry bhindi's, cut into small pieces size which is shown in below picture.
2. Heat oil in a Kadai, Add cut onions, green chillies, pepper powder, red chilly powder, coriander powder and turmeric powder. Fry well and sauté for few minutes.

3. Add the bhindi's, salt and cover and cook it in a low flame.

4. Check it, After every 2 minutes, stir it well slowly with very soft hands otherwise bhindi cracked.

5. When bhindi becomes soft or crispy and the oil starts to leave, remove from the flame.

6. Garnish with lots of chopped coriander leaves and Serve with chapatti or parathas or rice.
Rice is the most widely consumed food in India. It is a good source of protein. Now-a-days people are choosy about food, they prefer only low fat food or oil free and This rice pulao is low fat and cholesterol free pulao or biryani.

This dish is delicious combination of rice with vegetables (as per your choices) , all Indian spices and one interesting tangy ingredient Lemon juice. I prepare all rice dishes in a Kadai not in cooker. In Kadai, it will take time to cook but their taste is too delicious as compare to cooker. This is vegetarian dish. You can serve this veggie rice pulao with dahi, raita, pickle or any curry vegetables or yellow dal tadka.

Ingredients :

Basmati Rice - 1 cup
Potato - 1 no (diced in to pieces)
Tomato - 1 no (chopped)
Green Peas - 2 tbsp.
Green chillies (finely chopped) - 1 no
Jeera
Fresh Lime Juice - 2 tbsp.
Coriander Leaves (finely chopped) - 1 tbsp.
Vegetable Oil - 1 tbsp.
Water - 2 1/2 cup

Spices :

Red chilli powder
Salt to taste
Coriander powder
Garam masala powder
Turmeric powder (optional, I didn't put in my recipe, if you want you can put in it)

Procedure :

1. Clean the rice, wash it and after wash the rice with water, soak it in water for 1/2 an hr.

2. Peel the potato and onion. Cut all vegetables like below in the picture or as per your like.

3. After 1/2 an hour, drain the water from the rice and discard the water.

4. Take a non-stick Kadai and place it on medium flame, pour oil and when it is hot, add jeera.

5. First fry potatoes with green chillies, then add onions, saute for few min till onion becomes transparent. Add green peas and potatoes.

6. Add all Indian spices - salt to taste, coriander powder, red chilli powder, garam masala powder. When this tadka is prepared.

7. Add soaked rice and water and let it boil. Give first boil on a high flame and then cooked the rice on a medium flame for 10 mins.

8. Once the rice will be semi-cooked, add Lemon juice and coriander leaves, mix it well.

9. Cover the Kadai and let it cook until water will get evaporated. You can sprinkle coriander leaves before serving.

10. Serve hot-hot rice pulao with dahi, raita, pickle or any curry vegetables.

Homemade Aloo Tikki
Aloo Tikki is one of the most popular street foods in India. Crispy Aloo Tikki is made up of boiled mashed potatoes with various herbs & nuts. Aloo Tikki is also called "Potato Cutlet" or "Potato Patties". 

You can served hot Tikki in a different ways as per as your taste. Here I served Aloo Tikki with Toasted Bread and twisted Mayonnaise dip. There taste is totally changed when you add Tikki with mayonnaise. I am sharing my recipe of How to make Aloo Tikki with Twisted Dip..

Ingredients :

Boiled Potatoes - 6 nos
Bread crumbs - 2 tbsp.
Onion - 1 no(finely chopped)
Chopped Green chillies - 1 nos ( or as per as your requirement)
Coriander Leaves - A handful (finely chopped)
Red chilli flakes to taste (chopped)
Chat masala - 1 tbsp.
Refined Oil for Shallow fry
Salt to taste
A pinch of Garam masala

For Mayonnaise dip - Take a mayonnaise, add red sauce, salt & add pepper...mix it well for dip.

Preparation Method:

1. Pressure cook the potatoes. After cooling, crush the potatoes gently.

2. Add bread crumbs, green chillies, onions, coriander leaves, red chilli flakes, salt and add chat masala.

3. Mix them together, till they got blended well.

4. Make small balls of the above mixture and flatten them a bit.

5. Heat a little oil in a pan/ tawa. Put the above Tikki into the oil and shallow fry, till they become golden brown and crispy on both the sides.

Note* : Serve Aloo Tikki with Toasted Brown Bread and Mayonnaise dip.

You can make Bread Aloo Tikki Sandwich : Just Toast the brown bread on tawa with little bit butter. On the toasted bread, spread the Mayonnaise dip and put Aloo ki Tikki inside the sandwich. Serve it just like in the below picture.

Orange Mocktail Recipe
This Mocktail drink is in tangy and delicious in taste. It is a homemade mocktail drink. The tangy taste of orange combined with lime juice and are laced with sugar, soda charged with fresh mint. It is pure Non-alcoholic drink. There is some twist also. Here's a mocktail recipe for your summer enjoyment.

Ingredients :

Orange Juice - 1 cup
Lime Juice - 1/4 cup
Sugar - 2 tbsp. (adjust it according to your taste)
Water - 1/4 cup
Soda - 1/4 cup (optional)
Mint - 2 leaves
Slice of oranges and lime 
For Twist : 1 tbsp of ginger juice

Procedure :

1. First, filter the juice alone from oranges.

2. Combine all the ingredients and stir well.

3. If you want to add soda, adding mint is very refreshing(take 2 leaves and crush it with your hands and it in).

4. Mix well, then strain it before serving.

5. Ready to serve it before serving Add slices of lime, orange in a glass & crushed ice to the drink.

Note : A tbsp of ginger juice can add a different twist to the drink.

Crunchy Ajwain Poori | Ajwain Poori | Ajwain Poori Recipe
This is one of the Indian flatbread. We usually made poori's in some special occasions, festivals or once in while, because they have lots of calories (oil) but  Good for Health too. Pooris are made up with differ-differ flavours according to our tastes and Ajwain Poori is one of them. You can have this Poori / bread any time, this is not specific time meal. This is my Mom's recipe.

They are so simple to make and kurkuri or khasta in taste. They are made up with wheat flour, ajwain and some Indian spices. This is best serve with pickle, any curry veggie, Masala Buttermilk , rice kheer and tea also.

Ingredients :

Wheat Flour - 1 cup
Ajwain (Carom seeds) - 1/2 tbsp. (depending upon your taste also)
Salt to taste
Red chilli Powder
Oil used [ for frying + 1 tbsp. for making dough ]
Water

Procedure :

1. Sieve the wheat flour and rub the oil into it.

2. Add salt, red chilli powder, ajwain and mix well.
3. Add enough water and knead into a stiff dough.
4. Heat oil in a Kadai or a pan, roll out the dough into small size chapatti.

5. Put small size Pooris into hot oil (just take care of yourself with hot oil) for deep fry. Drain into the tissue paper (for excess oil).
6. Ajwain Poori are ready. Serve hot-hot poori's with pickle, any curry veggie, Masala Buttermilk.
Note :- Keep this dough for 4-5 days in a fridge.
 
Buttermilk mixed with green raw spices
Masala Buttermilk is also called Chaas. It is made up with thick curd mixed with green raw spices. This is one of the popular summer cooler made from curd/yogurt, made all over India but with different variations. It is good for digestion also. Buttermilk is a cool and refreshing drink for summers.

Tip*-  After having Lassi please don't consume / drink water, not good for health.

Ingredients :

Thick curd - 2 cups
Cumin seeds (jeera) - 1/2 tbsp.
Ginger(chopped) - 1 tbsp.
Chopped Coriander leaves
Curry Leaves - 5-6 leaves
Green chilly - 1 (chopped)
Sugar - 1/2 tbsp. (optional)
Salt to taste
Oil
water

Method :

1. Add one glass of water to curd and blend with a handi or in a mixer to make buttermilk.

2. In a hot pan/Kadai, heat some oil and fry cumin seeds, green chilly, ginger and curry leaves.

3. Switch off the flame and add curd, salt to taste, sugar and coriander leaves. Either cool it in the fridge or serve it immediately with crushed ice.

Buttermilk mixed with green raw spices
This is Egg-tarian recipe. This is best meal for breakfast. This is so simple and delicious recipe. This is also called Egg Pakoda toasted with butter and other veggies & less spices. Those who loves Egg and doing differ-differ creativity with them. They should try this also.

We know eggs are full of nutritional facts, and packed with protein, vitamin and minerals. This is full box of healthy facts. The recipe is here followed step by step :-

Ingredients :

Brown Bread (cut into squares) - 2 nos. (You can take any bread)
Eggs - 2 nos.
Chopped Onion - 1 nos.
Green chilli (chopped) - 1 nos. (optional)
Butter to toast
Chopped Coriander leaves
Salt to taste
Red Chilli powder
Pepper powder - to taste

Procedure :

1. Break the egg into a bowl, add salt, pepper, chopped onions, green chillies, coriander leaves and beat with a fork.
2. Heat 2 tbsp. of butter in a frying pan/tawa.

3. Dip bread slices into egg batter, coat well on both sides of the bread slices with the egg batter and fry on both side until brown and crispy.
4. Repeat with other remaining slices of bread  and the egg batter.

5. Serve with any soup, tea, cold drink or ketchup !!

Meetha Pooda (Sweet Pancake) is a pancake which is made by wheat flour, water and sugar only. It is best and one of the easiest recipe. You can eat this Pooda at any time. 

This recipe, I learn from my Mom, she prepared this Pooda in mid of late July. In Punjabi, there is one fast coming in late July in Saawan month or that is also prepared in rainy days also. It is best combination with Rice kheer (pudding).

This is one easiest pancake which are having less ingredients and time also. For prepared this recipe, we need to be prepared batter first.

Learn how to make meetha pooda with very simple and easy steps.

Ingredients :

Wheat flour - 1 cup
Water - 3/4 (or as needed)
Sugar to taste - 4 to 5 tbsp
Fennel seeds/ Saunf (its optional, but I added)
Oil for shallow frying

Preparation Method :

1. For Batter - Take a wheat flour in a bowl, add sugar, saunf and Mix it well. Then add water and mix it continuously without lumps until sugar is dissolved. Keep it aside for few minutes.

2. Take a non-stick pan/tawa, grease the surface with oil. Once the pan is hot, then start pouring batter with the help of Spatula or you can use steel bowl also.

3. Cook in a low flame, once the one side is cooked. You can changed the other side of pancake with the help of Spatula and cook it well, you can see it in above picture.

4. Once both the sides of the Pooda or pancake has been browned, I lifted off them the tawa or pan and placed them on a plate.

5. Now your pancake is ready to eat.

Sometimes we feel bored to eat veggies and pulses in our daily life, that time Onion Paratha will give you new fresh meal. We know about Onions are little bit bitter and sometimes sweet. When you have this paratha, you will feel the sweetness and crunchiness of onions with Indian spices. It's very easy recipe, you can make it at your home no need to go any restro's and dhabha's .

Onion Paratha is one of the most popular bread in India. This paratha is stuffed with only onions and other Indian spices. Again my favourite paratha. I usually made this paratha at home when I felt bored to making and eating veggies.

You can make end number of paratha's like rice paratha, methi paratha, palak paratha, leftover sambar paratha, aloo paratha etc.

Ingredients

Chopped Onions
Ajwain ( Carom seeds )
Red Chilli powder
Garam Masala powder
Salt to taste
Chopped coriander leaves


Preparation Method

1. Peel onions and wash it properly and chopped it and Add all spices like salt to taste, red chilli powder, garam masala, ajwain and chopped coriander leaves. Mix all well.

Note*- Ajwain is good for digestion. We use Ajwain in this paratha for new taste and digestion also.

2. Take a piece of dough in hand. With the help of rolling board and rolling pin, roll it out in a small circle. Now, put the Onions filling in the center of the rolled out dough. Make a paratha and It should be little bit thicker than roti.

3. Place it on a heated tawa and cook it as you would cook plain paratha. Cook both the side and use 1/2 teaspoon oil on one side, until light golden brown spots appear.

4. Serve Onion Paratha with dahi, yummy pickle or you can have it with Sweet or Salted Lassi also.

Everybody is curios to know that How to make Stuffed rice paratha, I'll tell you how to prepare it. If you make any rice like jeera rice, pulao or steamed rice at your home to eat and don't throw the remaining rice, now you can create rice paratha for that remaining rice. It's crispy and crunchy in taste.

Rice Paratha Recipe is one of the most popular paratha from north India. This paratha is stuffed with mashed rice and Indian spices only. This is one of my mom's recipe she prepared most of the times, when she prepared rice on the very next day she can prepare this rice paratha.

You can prepare there mixture as per as your taste. The method which I am presenting here is very simple and easy to make.

Ingredients :

Mashed Rice (any rice)
Chilli powder
Garam Masala powder
Salt to taste
Chopped coriander leaves


Here's the recipe of Stuffed Rice Paratha:

1. On the very first step, you need to mash rice with your hands or you can mashed it with fork also.

2. Then Add all the spices like salt, chilli powder, garam masala and chopped coriander leaves.
3. With the help of rolling board and rolling pin, Take a piece of dough. Roll it out in a small circle. Now, put the mashed rice filling in the centre of the rolled out dough like in the below picture.
 4. Roll out the dough and make a potli like below pic.
 5. Make a paratha and It should be little bit thicker than roti.
6. Place it on a heated tawa and cook it as you would cook plain paratha. Cook one side with oil until light golden brown spots appear on one side.

7. Serve hot-hot Paratha with dahi, yummy pickle, butter, white homemade butter or you can have it with Lassi also.
