Vegetable Tomato Omelette Recipe with step by step photos - An omelette without eggs ? how cool is it. This is quick and easy breakfast. This is one omelette which is amazingly soft, spongy, crispy and stays so even after some hours. This is vegan and gluten free tomato omlette recipe. 
 
Perfect monsoon snack with a cup of ginger tea or fresh salad. It's quick, instant and excellent snack for tiffin boxes with some tomato ketchup or coriander chutney. The tomato
omelette makes for a good breakfast or brunch.

We called it besan ka cheela or besan ka pooda, my mom used to make for us during our childhood times, when we are not well, its good medicine for cold and cough(besan are always good ingredient for monsoon times) my mom didn't add tomatoes in it, this time I give a twist into cheela and used tomatoes in it and give another variation of
omelette.

Recently I am associated with one and very talented bloggers group Shhhhh cooking secretly challenge, first where they decide the theme and then decided the partner who is give ingredient to their partner and vice-versa, very interesting idea. 


This month my partner is very good blogger plus awesome baker - Mayuri Patel, she introduce me on that group and luckily she is my partner.

She give me two ingredients according to theme - #MonsoonSpecialSnack - the ingredients are Chana Dal (either used raw or used in powder form) and other one is Tomato. 


So I used Besan Flour with Tomato, and present my dish for this month is "Tomato Omelette" which is made up with besan, ofcosre tomato and with twisted ingredients. I decided to make this because when you heard about monsoon people think about fried snack, but I choose something different which is not fully fried but ya it is shallow fried on a pan with little oil. 

My monsoon snack is "Healthy bhi plus Tasty bhi" which is perfect for morning or evening snack or lunch or dinner meal. This is overall meal. This is my lunch menu with fresh fruit salad.

Can't wait to share my twisted recipe of besan ka cheela or omelette without eggs recipe.


Let's start the process with step by step process.

Ingredients :

Besan /Gram flour / Garbanzo Bean Flour  - 1 cup
Finely chopped onion - 1 medium
Finely diced tomato - 2 medium
Finely chopped spring onion(green part) - 1 tbsp
Pinch of Baking soda/ cooking soda
Red chilli powder - 1/4 tsp
Turmeric powder - 1/2 tsp
Salt to taste
Fresh Coriander leaves - 2 tbsp
Water - 1/3 cup

For Fresh Salad, I made it very simple using

Chopped Kiwi - 1 no (
You can take use any veggies and your choice of fruits into it.)
Finely chopped Apple - 1/2
Finely diced Cucumber - 1/2
Finely diced Orange Carrots - 1 no
Fresh Coriander Leaves
Chaat Masala
Salt to taste
Lemon Juice
 

Salad Recipe - Mix all the ingredients and toss them with very light hands and Serve it with your dish.

Preparation Method :

1. Sieve the besan (it's an important step to get rid of the lumps).


2. Add all chopped veggies onion, tomato, green part of onion with the spices. 


3. Add 1/3 cups of water or more and mix well with a spoon until a smooth batter forms. Add a pinch of soda and freshly chopped coriander leaves, mix it well and keep it aside for 5 minutes.


4. Ladle 2 heap of tablespoon of batter and pour on a lightly oiled preheated griddle and cook for 2 minutes each side until lightly brown on low flame. 


5. Serve hot as a full or cut into different shapes like I do circle, kids will like it more if you give them in their favorite shape. 


I do believe the dish looks good if you present them in a creative plating and ofcorse taste matters.


Note :

* For Circle shape of omlette - take your shape cutter and cut it or those who don't have they can use cap of your bottle like I used my catch spice cap :D

* For kids tiffin box - Give their fav shapes, make a eyes or nose using tomato ketchup, kids will enjoy dish in this way rather than plain omlette and Don't discard the sides of omlette, use it for their breakfast..LoL :D

How to make Famous Mumbai Style Tawa Pulao with step by step photos - Perfect one-pot meal recipe of tawa pulao which is spiced with pav bhaji masala and other Indian spices. So aromatic and super delicious rice recipe.This is very famous pulao made in Maharashtra.

I never had this pulao before my marriage, after my marriage, first time I tried this tawa pulao in Nagpur at my MIL place, very colorful and full spicy with lots of veggies.

This rice recipe is slightly spicy, aromatic and the unique flavorful one-pot meal.


Now-a-days this tawa pulao is very famous in Bangalore too. There are so many street food points and one of this tawa pulao and pav bhaji point is there. But they uses some color and red chilly powder to make it rice more red in color and so it become more spicy, I don't like more chilis in my food.
  
The street side vendors use a big tawa for making tawa pulao. For home cooks, this recipe can be made in a kadai (wok).

Even though they call it pulao it is an version of fried rice cooked with Indian spices especially with pav bhaji masala. 


You can prepare this pulao with your left-over rice also, but for that just make a tawa-masala and mixed with your leftover rice with it it.

Perfect dish for tiffin box for kids, you can take this pulao on your long journey, it will be remain good for one day. Tawa pulao goes best with boondi raita, vegetable raita or an onion-lemon side salad.

You can make end number of rice like lemon rice, Tomato pulao, sweet rice pudding and simple veggie biryani

Let's start to make this flavorful and aromatic tawa pulao recipe with simple step-by-step process.
 
Ingredients :

For the Rice

Basmati rice or long grained rice - 1 cup
Water for cooking the rice - 3-4 cups
Oil - 2 to 3 drops
Salt to taste (add less salt because we use it in veggies)

For the Tawa masala

Finely Chopped Tomatoes - 2 no (large)
Finely Chopped Onion - 1 no (medium)
Cumin seeds- 1/2 tsp
Butter - 2 tbsp + Oil - 1 tbsp
Chopped carrot - 1 no
Chopped Potato - 1
Green Peas/ Matar - 1/2 cup (frozen or normal)

Chopped Green Capsicum - 1/4 cup
Chopped Bell peppers(Yellow and Red) - 2 tbsp
Ginger-garlic paste - 1 tsp
Red chilli powder - 1/4 tsp (add as per as your requirement)
Pav bhaji masala - 1/4 tsp
Turmeric powder - 1/4 tsp
Garam masala - 1/4 tsp (optional)
Salt to taste
Chopped coriander leaves

Preparation Method :

 
For preparing the rice:

1. Clean and Wash the rice till the water runs clear of starch. Soak the rice in enough water for 20-30 mins. Drain it and then add the rice to a pot.


2. Pour 3-4 cups water in the rice. add salt and few drops of oil. Stir and cover and cook the rice till the rice grains are cooked well.
(don't over-cook the rice too much or make them mushy,it will spoil the texture of pulao)


3. In a strainer, add the cooked rice and let all the water drain away. Once all the steam has passed from the rice, cover the rice with a lid.

For preparing the tawa masala:

1. In a pan or kadai, add oil plus butter melt it. Then add cumin seeds and fry them till they get browned.


2. Add finely chopped onions and saute till translucent and add the ginger garlic paste and saute till the raw aroma goes away.

3. Now add the finely chopped potato, carrot, all 3 bell pepper(red, yellow, green) and peas, saute for few minutes and then add tomatoes, stir and add all the spice powders - turmeric, red chili powder, salt, garam masala and pav bhaji masala.

4. Stir again and saute the whole mixture till you see butter releasing from the sides. Now add 1/4 cup of water and close the lid till all veggies cooked and all the masala become dry.


5. Once all the veggies cooked and water evaporated, then finally add the cooked basmati rice and gently mix the veggies with the rice with very light hands.

6. Garnish with coriander leaves and sprinkle some lemon juice before serving on tava pulao.


7. Serve hot tawa pulao with mixed vegetable raita or mint-cucumber raita , boondi raita or plain yogurt accompanied with papad and pickle.

Lobia Masala Curry Recipe - A traditional punjabi recipe of lobia masala are cooked in onion-tomato based gravy with Indian spices. It is a flavorful and creamy staple food every Punjabi grew up.

For a long time I wanted to post this punjabi recipe of lobia masala or lobia curry recipe, but was not able too. This is personally mine and my family favorite dish, so this is prepared in our lunch menu or sometimes dinner menu with rice or roti atleast weekly or bi-weekly.

This black-eyed peas known as lobia in Hindi language or we punjabi called lobia or rawayi are small white seeds with a dark spot resembling to eye. Hence the name black-eyed. It is also known as chawli. Lobia curry is best served with jeera rice or simple roti or with any Indian bread. 
 
This is very simple and healthy dish prepared with black eyed beans cooked with onion-tomato based gravy and Indian Spices


I have learn't this curry recipe from my mother. Her recipes are always easy and simply made with basic ingredients which is easily available in our Indian kitchen. 


The lobia masala recipe that I am sharing today has been prepared in traditional punjabi way. 
 
Let's start the procedure of how to make this simple and yummy dish of lobia masala with step-by-step process.


Preparation time : 35 mins [Soak Time : 30 minutes]
Cook time : 25 mins
Recipe Type : Main Dish
Cuisine : Punjabi, North-Indian
Total time : 1 hour

Ingredients :

Black Eyed beans / Lobia - 1 cup
Coriander Powder - 1/2 tsp
Turmeric powder - 1/2 tsp
Red chilli powder - 1/4 tsp (according to your taste)
Garam Masala Powder - 1/4 tsp
Salt to taste
Finely chopped Coriander Leaves - 2 springs for garnishing
Oil - 2 tbsp

For the masala :

Roughly Chopped Onion - 2 nos
Roughly Chopped Medium size tomatoes - 3 nos
Ginger-garlic paste - 1 tsp
Green chillies - 1 or 2 no [optional]

Preparation Method :

1. First clean and wash the lobia 2-3 times with water. Then soaked the black eyed bean for 1/2 an hour and drain it. Keep it aside.


2. Make masala for curry - Grind the chopped onions, tomatoes, ginger, garlic paste in a mixer grinder. Add little bit water in between to make masala.

 3. Heat a oil in a cooker, add above onion-tomato curry masala. Saute for few minutes. Add all spices coriander powder, red chilli powder, turmeric powder and salt, saute in a low flame till the masala is cooked. When masala is leaving oil in around, it means your masala is cooked.
4. Toss drained black eyed beans in masala and add 5 cups(approx.) of water in it and mix well.
Pressure cook the lobia with until done. Give 1 whistle in a high flame, then reduce the flame in low mode and cook for 15 min.

5. Now open the pressure cooker, adjust salt if it is required. Add Garam masala powder and chopped coriander leaves and if the curry is not thick, reduce the curry to giving 1-2 boils in a high flame.



6. Punjabi Lobia Masala is ready to eat. Serve hot with rice, chapatti, lachha paratha and butter naan.

Toasted Sesame Barley Cookies with ginger step by step photos recipe - Another fantastic, energizing dessert recipe - sesame barley cookies with ginger. 

They are amazingly chewy, loaded with perfect amount of ginger and cinnamon flavor and the sesame finish looks so divine.

This is my second product review which I recieved from Belly Nirvana under Plattershare where they are promoting organic and natural food products and I was very excited to be a part of this innovative opportunity.  The products I received were

Today I am writing a product review of Oo Mugi Organic Barley Grains, this is called pearl barley. Most of the barley found in the typical supermarket is pearl barley.


Although it is technically a refined grain, it's much healthier than other refined grains because (a) some of the bran may still be present and (b) the fiber in barley is distributed throughout the kernel, and not just in the outer bran layer. 

Pearl barley cooks more quickly than whole grain barley.  

Barley flour has a sweet, nutty-like flavor and may be added to your favorite baked good recipes. I am highly recommend this flour to everyone..it controls the blood sugar level, reduces blood pressure and it also has slightly more fiber than whole wheat flour.o

Let's start the process of cookies recipe with step by step photos

Ingredients :

For the cookies

Whole barley flour - 3/4 cup
All Purpose flour - 1/4 cup

Softened butter - 3/4 cup 
Organic sugar(I took grated jaggery)/ Sugar/Brown Sugar - 1/2 cup
Egg - 1/2 (alternate option for vegetarian use milk instead of egg)

Vanilla essence - 1 tsp
Baking powder - 1 tsp
Salt - 1/4tsp tsp
Cinnamon powder - 1 tsp
Fresh Grated ginger - 1 tsp
Toasted Sesame seeds - 3 tbsp
Milk - 1tbsp

Preparation Method :

1. Grind barley in mixer grinder and sieve the flour.

2. In a large bowl, beat together butter and jaggery(cut into pieces or grate it). Beat in egg, grated ginger, cinnamon powder, and vanilla. 


3. In another bowl, combine barley flour, baking powder, salt. Stir into creamed mixture. Stir in toasted sesame seeds,
if you feel the dough is dry then add a 1 tbsp of milk in it and make a  soft dough.(I have added)

4. Combine all together and prepare a soft dough...keep the dough in fridge for half an hour.


5. Take a small bowl of cookie dough in your hand make a cookies using your hand or
Roll out the dough into a thick round(about 1/4cm) and you can cut into circles using a biscuit cutter also.

6. Arrange on a greased cookie sheets lined baking tray.

7. Preheat oven to 180C. Bake for 11 to 13 minutes or until golden brown.


8. Remove from oven and cool on wire rack. 


9. Enjoy with juice or coffee or tea !!
