The Best Vanilla Sponge Cake | Easy Vanilla Cake Recipe | Vanilla Chocolate Chip Cake
Vanilla Cake is a simple and classic cake recipe made with vanilla essence and chocolate chips, ready in under 60 minutes. An easy Vanilla Cake with a soft and moist crumb and great vanilla flavor. This Vanilla cake recipe is the perfect base for a birthday cake or any special occasion.
I made cake at home in almost every occasions or sometimes no occasions required to bake a cake...me, and my whole family are big fan of homemade cakes. So, I usually bake once in 15 days mostly banana and carrot cake, but this time I made my own favorite Classic Vanilla Cake.
CAN I ADD OIL OIL INSTEAD OF BUTTER IN A CAKE
If you run out of butter, then you can replace it with canola oil or olive oil for this vanilla cake, but if you use butter in the cake helps keep moist and light.
Adding butter into cake adds some flavor to the cake that won't be there if you don't use it or replace it with oil.
TIPS FOR MAKING VANILLA CAKE
1. After the homemade vanilla cake comes out of the oven, make sure it cools down completely BEFORE SLICING.
2. If you’re having trouble with your vanilla cake sticking to the cake pans once they’re done baking, try lining the bottom of the cake pan with a piece of parchment paper. Trace the bottom of the pan on the parchment paper, then cut out the circle and it should fit exactly.
3. Make sure you sift together your dry ingredients before adding them to the cake, to make sure everything is evenly dispersed before adding to the wet ingredients. If you don’t have a sifter, you can whisk your dry ingredients together but the texture might be slightly less light in the final cake.
4. For this vanilla cake recipe, make sure you bring the butter and eggs to room temperature before starting. This will make it much easier to evenly mix everything together.
5. I always use salted butter, so I can add a pinch of salt in as it necessary. If you want to use unsalted butter, you would add salt more salt to the dry ingredients.
6. Try topping this vanilla cake recipe with a few tablespoons of powdered sugar and your favorite ingredients like choco chips, berries, strawberries etc..

Ingredients :
1+ 1/4 cups all-purpose flour
1/2 Tbsp baking powder
1/4 tsp salt
1/2 cup butter softened
3/4 cups granulated sugar
2 large eggs room temperature
2 tsp pure vanilla extract
1/2 cup buttermilk or plain milk (add 2 drops of vinegar to make instant buttermilk) room temperature
1/4 cup Choco chips (optional)

Preparation Method :
1. Preheat oven to 350˚F. Butter and flour 9" cake pan, tapping out excess flour or I used parchment paper on below of the cake paper so it won't stick from down.
2. In a medium bowl, sift together flour, baking powder and salt. Set flour mixture aside.
3. In a large mixing bowl using an electric hand mixer (or stand mixer), beat butter and sugar on medium-high speed for 2-3 minutes until thick and fluffy, scraping down the bowl as needed.
4. Add 2 eggs, one at a time, beating well with each addition then scrape down the bowl. Add 2 tsp vanilla extract and beat to combine.
5. Reduce hand mixer to medium speed and add the flour mixture in thirds alternating with the 1/2 cup of room temperature buttermilk or milk, allowing the flour and buttermilk or milk to incorporate with each addition.
6. Scrape down the bowl as needed and beat until just combined and smooth. Lastly add choco chips for more colors on cake, vanilla and choco chip are made for each other 😀
7. Spread out the batter into the pans smoothing out the tops with a spatula. Bake on the center or lower rack at 350˚F for 28-30 minutes. Rest in cake pan for 10 minutes then run a knife or thin spatula around the edges to loosen and turn out onto a wire rack to cool completely.
8. Sprinkle some powdered sugar on top. Slice it and serve it.

The cake looks spongy and sift. One of the basic sponge cake with which we can make 'n' number of cakes. Loved the use of butter for that extra flavour.
