The Jaggery cake recipe is based on our 11th Foodie Monday BlogHop, interesting theme is #AlphabetFood, means my name is Jolly and my first word is "J" so i need to take an ingredients that starts from J, so I choose Jaggery and but confused what to make which is healthy as well as tasty. :D
So I decided to bake a cake using with jaggery instead of sugar and take another twist in baking to used whole wheat flour not maida.
Not only it tastes delicious but looks
so good that no other decoration is needed and this makes it perfect for
any occasion or family gatherings. This is a fabulous cake recipe.
Jaggery cake is a well risen cake and best thing about this cake is made with very simple ingredients, which is easily available in our kitchen. This cake recipe is basically from Srilanka only, there people bake a cake using jaggery with wheat flour or either sooji(semolina). A simple and easy recipe of eggless "Whole Wheat Jaggery Cake". The texture of the cake is soft and moist.....
But it’s really easy to make. Everybody loves it, probably it's the best jaggery cake I've ever made so far.

How
many of you have seen your grandparents and folks having jaggery after
every meal! I saw and Do you know why do they eat it and prescribe it to
others too? There are various purposes for it.
There are multitudinous
medical advantages of jaggery(gur). It is a crude sweet or sweetening
specialists as well as a great solution for some infections.
Health Benefits of Jaggery
Jaggery is a great remedy for anemia, asthma, joint pains and menstrual pains.
It also aids in digestion, purifies blood and keeps the skin away from problems such as acnes and pimples.
It is a great energy booster as it provides us lots of energy.
You can make end number of cake which I have tried and tested like whole wheat eggless chocolate cake, rainbow swirl cake, chocolate biscuit cake, Orange Chiffon cake, chocolate cake, vanilla-chocolate swirled marble cake, chocolate fudge
A soft and light cake. Let's start step by step vegan jaggery cake recipe with step by step photos. Ingredients : Wheat Flour - 1.5 cups Jaggery - 3/4 cup - Powdered (You can use 1 cup for more sweetness) Baking Powder - 2 tsp Table Salt - A very small pinch Cashew Nuts - 1 tbsp Raisins - 1/2 tbsp Water - 1 cup (Use milk for a non - vegan version) Vegetable Oil - 7 tbsp Vanilla essence - 1 tsp 7 inch round cake tin Vegetable Oil - 1/2 tsp (For greasing the cake tin) Wheat Flour - 1 tsp (For dusting the cake tin)
Preparation Method :
1. Grease a cake tin with little bit oil evenly on the base and edges of the tin
and also dust the inside of the tin with a little flour to help the cake
can come outside smoothly from cake tin and not burn also.
2. Pre-heat the oven to 180°C / 350°F for 10 minutes.
3. Dissolve jaggery in water and strain the liquid through a sieve. Mix in the vanilla extract. Keep it aside.
4. Sift Wheat flour, salt, baking powder through a sieve at least 2 times.
5. Once sifted, mix all the dry ingredients thoroughly using a spoon. This is just to ensure the salt, baking powder are evenly distributed through the wheat flour.
6. Make a well in the center of the flour mixture and pour in the water, jaggery and vanilla essence, that was prepared in step 3.
7. Gently bind the ingredients with a spoon. Please don't use any whisk or beater for this. Over beating will make your cake very dense and heavy.
8. Next add in the oil. Again combine the mixture gently. The batter might form a few clumps.
9. Pour this batter into the prepared cake tin. Tap the cake tin on the counter to ensure the batter levels out. I added cashew nuts and raisins on top of the batter as a flower design.
10. Put this into the pre-heated oven and bake at 180°C / 350°F for 20-25 minutes or bake until a toothpick inserted into the center of the cake comes out clean... (The baking time depends on the oven. Mine took just 24 minutes to bake. So you need to start keeping an eye on the cake after 15 minutes.)
11. After the baking time is over, allow the cake to cool down completely.
12. You can cut and serve this cake with tea or coffee.

homemade donuts are always on my to do list. I love krispy kerne and
dunkin doughnuts and have always special place for this sugar mini donut
in my heart. These are so addictive at my home and aromatic bite sized doughnuts recipe, which doesn't require any doughnut maker.
I
delighted a sugar or chocolate donut from time to time, but I really
favor the slight crunch of all the sugar that coats the outside of the
fluffy, melt-in-my-mouth decency of the simple sugar doughnut with
chocolate sauce.... The adapted idea of making mini doughnuts recipe is from YouTube channel.
Before starting my process, I watched lots of videos and little bit
confused also ?? :P but I have decided to take a risk to make this
doughnuts, I mixed lots of the videos in one :D hahaha I know its funny but
really it turned out very crispy from outside....chewy & soft from
inside. So my risk, works here :)
I
was entirely amazed how the eggless recipe turned out so great. I will
soon post the conventional formula of making with eggs soon. I hope you

Let's start to make this eggless recipe of mini donuts made from scratch with simple step-by-step process. Ingredients :
All Purpose Flour / Maida - 3 cups + more as needed Yeast - 1 tbsp Warm Milk - 1 cup + more as needed Powdered Sugar - 3/4 cup + 1tbsp (for yeast) Vanilla essence - 1 tbsp Butter - 2 tbsp melted Baking powder - 1 tbsp Vegetable oil for deep frying Icing / Powdered sugar - 2 tbsp to cover cooked doughnuts HERSHEY'S Chocolate Syrup for dipping (optional)
Preparation Method :
1. Take 1 tbsp yeast, 1 tbsp sugar and 1/4 cup of warm milk in a bowl and let it sit for 5 mins till it foams up.
2. Now take rest of the milk, vanilla essence and melted butter or oil in a bowl and mix well.
3. Sieve all purpose flour, powdered sugar, baking powder in a large mixing bowl and mix well.
4. Make a well inside and pour in the yeast mixture and milk mixture in the flour and form into a dough.
5.
Grease a large bowl with oil and transfer this dough. Cover that with a
towel and allow it to rest for 1 hour or till it doubles in size. 6. Now punch down the dough and roll that out.
7. Now use your palm hand and Divide the dough into 5 batches..keep it aside, let them rise a bit for 15-20 mins.
8.
After resting take one batch of dough to make donuts, roll out in in
cylindrical shape and cut it into equal sizes and roll out in a small
circle.
9.
Now heat oil for deep frying on a medium heat. Drop the doughnuts and
fry them carefully till they turn light golden on each side. This will
take around 2 to 3 mins. Drain them and directly coat with sugar coating
so all the sugar will stick easily on donut.
10. Cover the cooked doughnuts in the icing sugar.
11. Serve with chocolate sauce and Enjoy !!
Tips
While frying the oil should not be very hot.. It might be uncooked from the inside.
You can also coat the doughnuts with dark chocolate glaze.

Special... My dish for this special theme - "Swang ke Chawal ki Khichdi" Navratri - This is important festival of Hindus, celebrated with lot of enthusiasm and excitement all across the country. It's a "Nine Days Festival" and it is dedicated to nine forms of Goddess Shakti. Navaratri falls in the month of September or October. Twice in a year.
During the festival of Navratri, Goddess Durga is worshiped in nine avatars. Each goddess has a different form and a special significance. Nava
Durga, if worshiped with religious fervor during Navaratri, it is
believed, lift the divine spirit in us and fill us with renewed
happiness.
All 9 days fasting is kept during navratri festival. Before starting the festival, we clean our home and temple because Durga Maa is coming into our home...We do daily worship of Durga Maa (morning and evening)..Before starting pooja we offered new Red/pink Chunari on Durga Maa and kept Panch Mewa (5 dry fruits) and fruits as a prasad. Let's come to our dish Vrat ki Khichdi - It is easy to prepare, easy to digest and very healthy recipe made with swang ke chawal. Samak ke chawal is not the rice variety it belong to millet family.
It known by many names like barnyard millet, samak ke chawal, samvat rice, vrat ke chaawal, farali khichdi . I love this khichdi very much and I usually make it in normal days(when no fasting is there) also.
This recipe is adapted by My Mom, she is used to prepare when we keep fasting during navratri days..It is easy to make and you can serve with plain curd, cucumber raita. I usually prepare this khichdi in cooker, it will take less time to prepare, mushy and yummy khichdi....filled your tummy for a day !! I made this dish on my first navratri fast. Very light and comfy meal !!
Swang ke chawal/barnyard millet/samak rice - 1 cup Cubed raw potatoes/aloo - 1/2 cup Cumin seeds/jeera - 1 tsp Water - 3 - 4 cups Ghee or oil - 2 tbsp (I use desi ghee) Chopped coriander leaves - 2 tbsp Rock salt/sendha namak as required Red chilli powder - 1/4 to 1/2 tsp (according to your taste)
Preparation Method :
1. In a bowl, soak the samak chawal for 10 to 20 minutes. Drain and then keep aside.
2. In a thick bottomed pan/cooker, heat 2 tbsp ghee or oil, add 1 tsp cumin seeds...fry the cumin seeds till they change color.
3. Then add cubed potato, stir and saute for two to three minutes. Season with rock salt/sendha namak, red chilli powder and stir well. 4. Then add the drained samak chawal. Stir and saute for a minute.
5. Add 4 cups water, stir again. 4 cups water makes the khichdi thick, which I prefer (if you don't want thick, add less water). Stir well.
6. Close the lid and let it cook after 1st whistle, slow the flame for 3 to 4 minutes after pressure builds up. Switch off the flame.
7. Serve hot swang rice khichdi topped with a bit of ghee and garnished with coriander leaves with plain yogurt or raita.

Earlier I was totally confused what to choose and
what to make, finally I decided to go for "Apple & Cinnamon" smoothie....

As we know apple and cinnamon are made for each other and the comforting flavors.
This Apple Cinnamon Smoothie with Toasted Almonds is perfect healthy drink for breakfast, an afternoon snack or a dessert. It’s super rich in vitamins and minerals and is packed with fiber from the apple, protein from the yogurt and omega 3 fatty acid from almonds.
Apple Cinnamon smoothie is slightly thick and naturally sweetened with honey, I didn't use sugar. It's a fantastic way to start your day. This yummy smoothie blend with spicy cinnamon, vanilla yogurt, toasted almonds and sweet apples.
Delicious smoothies are a great alternative to calorie-packed desserts or as a meal substitute. This smoothie will give you energy and keep you feeling full for hours.
Time : 10 min Preparation time : 5 min Servings : 1
Ingredients :
Large apple, sliced and frozen - 1 no Ground toasted almonds - 2 tbsp Cinnamon - 1/4 tsp Honey - 2tbsp Vanilla Yogurt - 1 cup ( you can take simple yogurt also)
Important Notes
I prefer freezing the fruits rather than adding ice cubes, the smoothies are tastier and more filling this way!
To make the toasted walnuts preheat the oven to 180°C, arrange the almonds and bake it for 2 minutes (you can toast it in normal skillet also on high flame).
Don't add too much of cinnamon, otherwise it will hit your tongue, after 1 sip.
Preparation Method :
1. Place all the ingredients in a blender and blend until smooth, pulsing as needed.
2. You might need to scrape down the sides of the blender a few times.
3. Pour into a glass and serve immediately with slices of apple and sprinkle toasted almond powder & cinnamon.
