Aloo Tamatar Ki Sabzi Recipe | Aloo Tamatar Recipe | Potato Tomato Stir Fry with step by step recipe and Hindi Video Recipe. Potato or Aloo has been one of the common staple food of India. This is very simple, comforting and easy to make dish which is cooked in North Indian households. This recipe has boiled potatoes cooked with tomatoes along with spices.

Aloo is Potato and Tamatar is Tomatoes. Aloo Tamatar ki sabzi is childhood for me. My mummy made it often, especially when we all siblings not in mood to eat any vegetables or dal. This was also made at the last minute when we had less time for dinner or lunch, very well going as a side dish too.

Potato and Tomato Dry Veggie

It is so much flavorful and delicious sabzi. This is the classic combination of potato and tomato ki Sabji without no garlic and no onion recipe, which is just bursting with flavours and so easy to make with only few ingredients.

On the nutrition front, potatoes are rich in carbohydrates and also a good source of Vitamin C, Vitamin B6 and magnesium.

This is the one veggie I usually make it at my home, when I am in mood to make simple stir fry aloo ki sabji or not in mood to stand few hours into my kitchen.😀😀 This is made on all festive occasion with poori along with side sooji ka halwa.

Easy Potato Veggie

This sabji is very versatile and everyone has their own version of it, I am only showing you my version of how to make stir fry aloo tamat ki sabji, but you can also make curry aloo tamatar ki sabzi. 

This recipe goes with poori, roti and ajwain paratha with some raita and pickle on the side.You can also made this sabji during your fasting times also by just adding senda namak(rock salt) as replace with normal salt, add spices according to your custom follow. Since this is a No Onion No Garlic recipe.

Potatoes are first boiled and then pan fried with tomatoes along with masalas which give a nice flavor to the sabzi. This is the dry version of all Tamatar ki Sabji you can even make the easy potato curry also, which is onto my blog.

Ingredients:

Potatoes, medium sized – 5 no, boiled, chopped and mashed coarsely with hands into uneven pieces

Tomatoes, roughly chopped – 2 large sized

Jeera/ Cumin seeds – 1 tsp

Olive oil/cooking oil – 2 tbsp

Indian spices

Salt to taste

Coriander powder – 1 tsp

Red chilli powder – ¼ tsp

Garam Masala powder– ¼ tsp

Freshly chopped coriander leaves for garnishing

Preparation Method:

1. First boil the potatoes, peel the boiled potatoes and cut into cubes and mashed the boiled potatoes. 

2 Heat oil in a pan or kadai, add cumin seeds stir till it gives you nice fragrance of jeera, add finely chopped tomatoes into it.

3. Add all spices - salt to taste, coriander powder, red chilli powder. Mix well and cook.

4. Sauté the tomatoes till they soften and you see oil releasing from the sides.

5. Add the chopped, mashed potatoes and stir well. Mix it we and sauté for a minute. 

6. Check your seasoning, if required dd this stage and garam masala, close it with lid, cook for few more minutes.

7. Lastly add chopped coriander leaves and stir well. 

8. Serve aloo tamatar ki sabji with pooris or roti's or parathas along with some side raita or pickle or salad.
