Kesar Aamras recipe with step by step pictures – A sweet delicious mango treat made from flavored mango pulp served during summers with poori or roti or served as sweet after meal. 

Aamras is very popular dessert in Rajasthani cuisine and Maharashtra, Gujarati homes, especially during festivals. 

Summer is on its peak and our local market is already flooded with best qualities of
Hapus mangoes in Bangalore. Aamras is nothing but mango juice. “Aam” means mango and “Ras” means juice, so the word aamras means mango juice. 

During summer season aamras is very popular dish in gujarati and maharashtrian homes, my husband is from maharashtra so he loved aamras..


when he see the good quality of mangoes in market as compared to last year, he buy 1 kg of mangoes and said me please make an aamras for me, so I can have with my every meal. 

Aamras recipe is prepared with different types of mangoes available in market. 

My husband love aamras in any form, so this is my forth batch of making aamras at home :D whenever I make he start eating so can't take pictures of that so this time I make it when he is in office :P and this time I can take the pictures of aamras. But this time I made "Kesar Aamras" [flavored aamras]. 


If you don't want Kesar in your aamras just discard that step otherwise all recipe is same for normal aamras also.

I usually liked fresh aamras and moreover consume for another day only otherwise aamras change the color & taste, so its better to make fresh batch every time. 

It will take hardly 10 to 15 minutes to prepare.

Aamras is best prepared with ripe mangoes or overripe too, if they too ripe then it is best to make aamras instead of eating slices. 


Usually in my home we cut fruits(apple or mangoes) into slices and eat along with dinner. Aamras goes really well with puri or roti.

Let's start to make this easy and quick recipe with simple step-by-step process with pictures.

Total time : 10 minutes
Preparation time : 10 minutes
Recipe type: Side dish
Cuisine: Gujarati, Maharashtrian
Serves : 2 person

Ingredients :

Alphonso | Hapus Mangoes - 2 no
Milk or Water - 1 cup
Kesar/Saffron - A pinch
Sugar / Powdered jaggery- 3 tbsp

Preparation Method :

1 Wash the mangoes. Rinse the mangoes, then peel and chop them.

2. Add sugar, water and mango pieces in a blender...blend till smooth.


3. Add milk and crushed kesar/saffron strands and mix well to thin down the aamras.


4. Pour the aamras into serving bowl and chill in the refrigerator.


5. Serve the cold aamras with poori or serve with chapatis. You can serve this as sweet dish or as a dessert after your dinner or lunch.


6. Enjoy delicious Kesar Mango Aamras!!!!

Tortilla Pizza with step by step photos recipe - Tell me, what screams Happy Monday more than Pizza. This is another Quick & Simple recipe that I just fell in love with this week. It involves 5-Ingredients sauce, as well as a handful of other healthy ingredients that are quick to throw together.

If you are in the mood for having pizza, but don’t want to spend time to making the dough, the easiest thing you can do is make Tortilla Pizza.



Take a tortilla, spread it with ketchup, sauce and other toppings of your choice and bake briefly in the oven. You will get your thin crust pizza ready in just a few minutes. 

You can add your choice of veggies in it(onion, paneer, mushrooms, corn, beans and many more), vegan (by replacing mozzarella with vegan cheese) or even meat lovers pizza (by adding some chicken pieces,lean ham).


For cheese, I have used GO pizza cheese, which is the mixture of Mozzarella and cheddar cheese, If it is not available in market then no problem take both of the cheeses in 1:1 proportion, which I already mentioned in recipe ingredients.


For pizza sauce, I have used readymade..taken this bottle from my recent trip to Australia..you can used pizza sauce homemade or readymade..Sharing the recipe of homemade Pizza sauce, make it and store in fridge in air-tight container, I have used this sauce for my pasta recipes.

 so I decided not to make base base pizza this time because I have already share one veggie pizza recipe and pizza grilled cheese sandwich in my blog, you can check it out below

Homemade Tawa Pizza

Pizza Grilled Cheese Sandwich

So, this time I wanted to share an easy peasy recipe of pizza to my readers, followers and friends, so anyone can try this and enjoy pizza anytime. This is biggest hit at my home, yippee !!

Serves : 1-2 servings
Preparation Time : 15 minutes
Cooking Time : 12 minutes bake and 2 minutes grilling

Ingredients :

2 tortillas (large, 6 inch)
GO Pizza Cheese - 1 cup (Grated Mozzarella cheese - 1/2 cup and Cheddar cheese - 1/2 cup)
Diced Red bell pepper -1/2 cup
Diced Yellow bell pepper - 1/2 cup
Diced Green Capsicum - 1/2 up
Chopped Spring onion (green part) - 3 tbsp
Sliced Tomatoes(circle) - 2 no
Tomato Ketchup - 1/4 cup
Pizza sauce (readymade or homemade) - 1/2 cup (I have used readymade)
Vegetable/Olive Oil- 2tbsp

Seasoning
Oregano - 1/2 tsp
Salt to taste
Pepper powder
Italian Seasoning for sprinkle

Preparation Method :


1. Preheat oven to 200 C and line a baking sheet with parchment or non-stick baking mat.


2. In a medium-sized bowl, mix together the ketchup, pizza sauce, oil & seasonings until combined.

3. Place tortillas on baking sheet and add your desired amount of pizza sauce on top. Divide veggies into two parts, first spread the sauce with a spoon, then add veggies (I have added spring onions green part, then mixture of all 3 bell pepper, then top over the grated cheese, then add circles sliced tomatoes and rest of the mixture of bell peppers and top-up over the more pizza cheese as shown in below step by step pictures.


4. Bake for 12 minutes at 200C on lower stand and then bake for 2 minutes on grill/broil mode on high stand  until golden. Watch closely as it can burn quickly on the broil/grill setting…

and no one wants a pizza burnt to crisp. I’ve been there. It ain’t pretty!

5. Take out of the oven. Sprinkle with Italian seasoning slices and serve immediately...YUMM !!

How to make Moong-Masoor Dal Khichdi
Moong-Masoor Dal Khichdi step by step photos recipe - This is one pot meal and perfect comforting food made with moong-masoor (red-yellow)lentils and rice. It is wholesome, nutritious, easy to digest and very light on the tummy.

This is good for all days if you feel sick or ill, doctors will recommend you to eat light, less oily, spicy food means to eat khichdi to recovering from illness. Khichdi is an South Asian preparation made from rice and lentils. It is also pronounce as khichri.

This is our family favorite dish, My naughty niece Aroha and my younger sister loves khichdi very much, they can eat whole day :P :D they can survive with khichdi as their full day meal.  

Dal khichdi recipe is the contribution of our Foodie Monday blog hop and this week topic is "Dal/Lentils", Dal's are very commonly used in the Indian cuisine. As dals we have to prepared on our daily basis. There are good healthy benefits of dals in general is that they are very rich in proteins.

So I have taken moong and masoor dal to make this khichdi so I'll share you some health benefits of these two -

Moong dal is a dieter friendly dal. This type of dal has minimal calorie and is a rich source of iron and potassium.
and
Masoor dal is improves the blood circulation in the body.


This is very simple dal khichdi made with lentils, rice with few spices, no veggies and no ginger-garlic in it, Sometimes a simple dish is all it takes, to make me feel warm and cozy. 


Its like that secure feeling you get while lying down on mom's lap :) It's like home. This simple dish of lentils for me is all that and more. A total comfort food. So when your stomach is upset then it is best to have khichdi and it can also be served to small babies, since it is easy to digest.

You can serve khichdi with curd or an accompanying with simple roti. I also like to drizzle some lemon juice on the khichdi..it's really scrumptious !!

Homemade Curd

Cuisine :  Indian 
Course : Healthy side dish
Time for Preparation : 5 minutes
Time for cooking : 10 minutes
Serves  4 People

Ingredients :

Moong Dal (green gram) - 1 cup
Masoor Dal (red lentils) - 1 cup
Rice (small grain preferred or any ) - 1 cup (Proportion of dal and rice = 2:1)
Cumin seeds / Jeera - 1 tsp
Desi ghee (preferred) or Oil - 1 to 2 tbsp

Seasoning :

Salt to taste
Red chilli powder - 1/2 tsp
Garam masala - 1/2 tsp
Turmeric powder - 1/2 tsp
 

Chopped Fresh Coriander leaves - 2 tbsp for khichdi
Water - 4 to 4.5 cups

Preparation Method :

1. Mix both dals and rice. Now rinse and wash lentils and rice together. Soak both of them for 15 minutes in water, then drain and keep aside.


2. Heat 2 tbsp of desi ghee or oil in pressure cooker, add cumin seeds/jeera.

3. Now add the drained rice and lentils to the pressure cooker. Stir for a minute.


4. Add 4 to 4.5 cups of water.

5. Add spices red chilli powder, turmeric powder, salt to taste. Stir well.


6. Close the lid tightly and pressure cook the moong-masoor dal khichdi on a high flame for 2 whistles.

7. Once the khichdi are cooked, give them a stir and adjust the amount of water as per your liking, if you want thick first add less water or give a 1 or 2 boil to khichdi on high flame, it become thick. Now check your seasoning, add garam masala and fresh chopped coriander leaves. 


8. Serve the hot khichdi with roti or paratha's with pickles and fresh veggies salad as a side dish and good accompanying with curd or lemon juice.

This is one of my favorite flavor combinations for a smoothie. Cool and fruity, a glass full satisfies my evening munchies.

When the weather is hot, I don't want to spend my time in the kitchen, I just want to be outside. 

Smoothies have been my go-to snack this week as in Bangalore weather it too hot so not to make anything else. This smoothies is cold, refreshing and healthy, and what you preferred in a hot day. It is simple and made with only 4 ingredients.


Creamy Cantaloupe Smoothie is the contribution of our Foodie Monday blog hop and this week topic is "Summer Coolers". Smoothies are an awesome way to pack tons of nutrition into a delicious treat that you can anywhere.

The trick to a tasty cantaloupe smoothie is to make sure the cantaloupe is ripe, juicy, and ready to eat. This is sugar free smoothie and I must say it's a STRESS BUSTER smoothie.


Taste: Sweet, juicy and melony taste with strong musk, banana aroma and vanilla after taste !!

Serving Ideas: During hot summer, chilled and refreshing this smoothie is a perfect afternoon drink.


Delicious smoothies are a great alternative to calorie-packed desserts or as a meal substitute. This smoothie will give you energy and keep you feeling full for hours.

Ingredients :

De-seeded, Peeled and chopped Cantaloupe - 2 cups
Banana - 1 no
Vanilla ice cream - 1 large scoop
Milk (full cream or skim) - 1/2 cup
Honey - 1 tsp

Ice cubes

Preparation Method :

1. Cut cantaloupe into halves and remove seeds. Dice it into large pieces as well as chopped banana also.


2. Add all the ingredients into blender and blend until smooth.


3.  Blend until smooth texture. Pour it into serving glasses, garnish with a small piece of melon, fresh mint leaves and serve.

Tips and Variations:

* Surface of a cantaloupe can contain harmful bacteria—in particular, Salmonella. It is strongly recommended to wash a melon thoroughly before cutting for consumption.

* The ice cream in this recipe makes the smoothie creamy and rich, however, if you prefer a healthier option, omit the ice cream and add vanilla yogurt instead.
