Veggie Poha | Flattened Rice | Kanda Poha Recipe

Poha is simple and tasty snack that is prepared in India. A popular breakfast is made from Flatten rice or beaten rice, veggies and other Indian spices. This is best and healthy breakfast recipe which can be eaten as evening breakfast also. This is very famous dish in Central India. It is also called Aval in some parts of India. It is easy to prepare.

Let's start to make this easy and quick recipe with simple step-by-step process with photos.

Ingredients :

Poha / Rice Flakes / Flattened Rice - 2 cups
Chopped Green chillies - 1 no
Chopped Onion - 1 no
Chopped Tomato - 1 no
Chopped Potato - 1 no
Curry Leaves - 8-10 nos
Cumin seeds - 1/2 tbsp
Mustard seeds - 1/2 tbsp
Groundnut / Peanut - 2 tbsp
Turmeric powder
Salt to taste
Red chilly powder
A pinch of Garam Masala Powder for taste
Lime Juice - 1/2
Chopped Coriander Leaves for garnish
Oil - As required

Preparation Method :

1. Sprinkle the poha / flattened rice with water to make it soft and keep it aside.
2. Heat oil in a kadai or pan, add mustard seeds, cumin seeds and wait till it splutter. 

3. Add chopped green chillies, curry leaves and onions, saute till onions becomes transparent.

4. Add chopped potatoes and saute for few minutes.

5. Now, Add chopped tomatoes, turmeric powder, salt to taste, red chilly powder and a pinch of garam masala powder and Mix it well. Saute till tomatoes becomes soft. At that time time add groundnut also, so they can little bit fry with tadka.
6. Now add Poha / Flattened rice and mix it well with the above tadka. Add Lemon juice, mix well.
 7. Garnish with chopped coriander leaves. Serve hot Poha with tomato sauce, green chutney.

Cooking Note : Sprinkle the Poha with chopped onions, tomatoes, & bujiya sev. It enhances the taste.
