Mango Ice Cream with Tutti Frutti(No Ice Cream Maker) with step by step recipe - This is a just 3 ingredient mango ice cream recipe. A sweet delicious mango treat made from juicy and ripe mangoes, condensed milk and cream. 4th ingredient added tutti fruity(it's optional). Me and my husband just love a lot in the ice cream. 


Do you love tutti frutti, actually I love tutti frutti very much I love to add it in my desserts as a garnishing, or adding in a  cakes too !! If you don't love it then no problem avoid it and make mango ice cream without

Summer is on its peak and our local market is already flooded with best qualities of Alphonso mangoes in Bangalore. Mango ice cream is prepared with different types of mangoes available in market. 

Every year during summers, I made this no churn mango ice cream a couple of times. This time I made this ice cream last 15 days back when Bangalore weather is too hot. We enjoy this ice cream after every meal :D

This is a rich, creamy and no churn recipe of mango ice cream.

With the fresh smell of mango, the ice cream comes out really rich and creamy. You can follow the same recipe in ice cream maker too. But this one is done without any ice cream maker.

We all know mango’s benefits hence it’s the king of fruits. I have added condensed milk (no sugar recipe).

The main things I have to take after that to set the dessert between 12 to around 14 hours of solidifying, the ice cream just needs two or three minutes to mellow before being anything but difficult to scoop and serve. 


The one of a kind thing about this formula is that it doesn't go from shake hard to liquefied fluid, it will mellow so it's scoop-capable like conventional ice cream you purchase from the shops!

Servings : 6 person

Ingredients:

Alphonso Mangoes , ripe and juicy - 2 large (to make 2 cups puree)
Sweetened condensed milk - 1 can (400 gm)
Thickened fresh cream(25% to 40%) / whipping cream , cold - 2 cups
Yellow liquid food colouring (optional)- 2 drops
Tutti-frutti - 1 tbsp



For Garnish
Tutti frutti 
Mint leaves

Preparation Method :

1. Dice the flesh of the mango. Puree using a blender or food processor or mixer grinder


then measure out 2 cups of mango puree (about 2.5 cups of diced mango) Add 2 drops of yellow food colouring if using. Blend it for few seconds more.
 
2. Pour puree into a non stick pan over medium low heat. Cook, stirring constantly about for 8 to 10 minutes or until it reduces by half. The test is when you can drag a wooden spoon across the skillet and the path remains there for a second 


3. Measure out the puree to ensure it's reduced to at least 1 cup. Cool the puree.

4. Combine cooled mango puree and condensed milk in a bowl. Whisk until combined.

5. Beat cream with a hand whisk or beater or stand mixer until stiff peaks form. 


6. Take a scoop cream and put it in the mango mixture. Fold through until mostly combined - lumps is fine (this is just to lighten it up a bit).


7. Then pour the mango mixture into the cream. Fold through rather than mixing with light hands like you would cake batter, until lump free. This will take a few minutes.


8. Pour into a container, add your tutti frutti on top


mix with very light hand and balance the surface. Then close using cling wrap.

9. Freeze for 12+ hours or midnight. Remove cling wrap. Stand for 5 minutes to soften slightly, then scoop and serve!


Important Tip:

You can make other flavors of ice cream too using with same method but different ingredients. Only 1 different you can enjoy variety of ice-cream at home without ice cream maker.

OTHER FLAVOURS:  


* You can skip the mango and just fold condensed milk into the whipped cream and add 2 tsp pure vanilla - this will make a creamy vanilla ice cream. Add-ins like choc chips, nuts etc! 

* To make a chocolate version, I use 1/2 cup unsweetened cocoa powder, whisked into the condensed milk, the folded with the cream.

7. Aloo Rasedaar with Poori or Paratha
This is one of the easiest and simple potato curry recipe which is made with boiled potatoes, tomato and few herbs & spices. Serve it with paratha or poori.



8. Butter Naan
Naan is one of the most popular soft Indian bread. Traditionally, naan is cooked in tandoor (hot clay oven), but I have prepared it over tawa. At home you can cook grill them in an oven or cook them on a tava/griddle.



9. Punjabi Sweet Lassi
Lassi is another cooling and refreshing drink to have in summers. Sweet lassi is quite popular in Punjab and North-India. This is best cool and refreshing rich drink for summers. This creamy drink makes your day perfect.



10. Pethe ki Sabzi
This is a simple and easy Indian style recipe of yellow pumpkin which is seasoned with whole spices and cooked in ghee made this sabzi everyone’s delight.

This is also called Langarwali dal (it is regularly served in the Gurudwaras) and Maa Choleyan di Dal also. You can check different version of the same dal, by click on it. Some people will called this dhabe wali dal also.

This is a punjabi dish made with a combination of two dals. The dals mainly used are split black urad dal and Chana dal (yellow gram). 

When we were kids, we hear this dal name first time and we all cousins start laughing  and make a funny jokes on it why not there is pyo(means father, it's a punjabi word) ki dal isn't 
too funny ?? :D

It's one of the comforting dal recipe which is a must-have on our meal planner once in every week. 

Very easy to cook and uses no fancy ingredients – yet so delicious and flavorful.

In Gurudwaras they put the lentils with water and whole spices to cook on slow flame in the evening and keep stirring it to become thick and creamy. 


By morning it's ready to be served to the devotees after tempering it. Serve it with simple wheat flour chapati, the full meal taste divine.

I have learnt this dal from my cook mentor "My Mom" , who has been making this way from many years. We called this dal " Family Wali Dal". This is our staple food in my father side family.


This is our family favorite dish because it's a smooth dal with a creamy texture from the black gram and a subtle nutty sweetness from the chana dal. 

You can serve dal with plain roti or an accompanying with white rice...it's really scrumptious !!

Moong-Masoor Dal
Dal Fry

Ingredients:

Whole Urad Dal - 1 cup
Chana Dal - 1/4 cup
Salt To taste
Turmeric powder - 1/2 tsp

For the tempering/tadka

Cinnamon/ Dalchini - 1 inch stick
Cumin seeds/ Jeera - 1 tsp
Chopped Onion - 1/2 cup
Chopped Tomato - 1 cup
Ginger/Adrak - 1 tsp
Garlic/Lahsun - 1 tsp
Green chillies Slit into halves - 1 to 2
Red chilli powder/Lal mirchi - 1/2 tsp
Dry mango powder/Amchur - 1/2 tsp
Coriander powder/ Dhaniya powder - 1 tsp
Cumin powder/Jeera powder- 1 tsp
Garam masala powder - 1 tsp
Desi Ghee - 4 tbsp
Fresh coriander for garnishing

Preparation Method :

1. Wash the Urad dal and chana dal and add it in a pressure cooker along with 4 cups of water, salt and turmeric powder and pressure cook till dal is done. ( Approx one whistle on high heat and 3-4 whistles on low heat )

2. Remove the cooker from heat and let the pressure release.

3. Mash the dal using the back of the ladle. Not fully just little bit, it gives you creamy consistency.

4. Heat ghee in a pan, add cinnamon and cumin seeds and let them crackle for a few seconds.

5. Add ginger, garlic and onion and fry until onions are slightly browned.

6. Add green chilies and tomato and fry for 2-3 minutes.

7. Add little water if required.


8. Add red chilli powder, dry mango powder, coriander powder, cumin powder and garam masala powder and fry for a few seconds.


9. Add the tempering in the dal and mix well.


10. Garnish with fresh coriander leaves.


11. Serve hot with Plain roti or laccha paratha or Naan.
